Mint Farro Side Salad

Preparation time: 10 minutes 
Cooking time: 30 minutes 
Serves: 6

1 tablespoon balsamic vinegar         
1 cup whole grain farro        
1 teaspoon lime juice         
A pinch of salt and black pepper       
3 cups veggie stock
1 tablespoon olive oil       
½ cup green onions, chopped ·       
2 tablespoons mint leaves, chopped 

1- In your instant pot, combine the farro with salt, pepper and the stock, put the lid on and cook on High for 30 minutes. 
2- Release the pressure naturally for 10 minutes, transfer the farro to a bowl, add the rest of the ingredients, toss, divide between plates and serve as a side dish.
