Currant Rice

Preparation time: 10 minutes 
Cooking time: 15 minutes 
Serves: 6  

2 tablespoons olive oil       
½ teaspoon chili powder        
½ cup yellow onion, chopped       
2 tablespoons coconut milk        
1 and ½ cups Arborio rice
3 and ½ cups veggie stock        
A pinch of salt and black pepper        
½ cup currants, chopped  

1- Set your instant pot on Sauté mode, add the oil, heat it up, add onion, stir and sauté for 5 minutes. 
2- Add the rest of the ingredients, stir, put the lid on and cook on High for 10 minutes. 
3- Release the pressure naturally for 10 minutes, divide between plates and serve as a side dish.
