Spiced Carrot Rice

Preparation time: 5 minutes 
Cooking time: 15 minutes 
Serves: 4  

2 cups basmati rice        
1 cup carrots, grated        
2 cups chicken stock        
½ teaspoon ginger, grated        
3 garlic cloves, minced
2 tablespoons olive oil        
1 yellow onion, chopped        
1 tablespoon cumin, ground        
1 teaspoon cloves, ground       
1 teaspoon cardamom, ground       
1 teaspoon sweet paprika        
A pinch of salt and black pepper 

1- Set the instant pot on sauté mode, add the oil, heat it up, add onion, carrots, garlic and ginger, stir and sauté for 3 minutes. 
2- Add cumin, cloves, cardamom, paprika, salt and pepper, stir and cook for 2 minutes more.
3- Add the remaining ingredients, put the lid on and cook on High for 10 minutes. 
4- Release the pressure fast for 5 minutes, stir the mix, divide between plates and serve as a side dish.
